Peacock Garden has a really good coconut shrimp plate that comes with tamarind sauce on the side. Also served with rice and steamed vegetables!

My husband & I really like the coconut shrimp @ MonteCristo's in west Ajijic next to la Huerta. It's very good.

The Iguana out near San Juan Cosala has a great coconut shrimp plate.  They butterfly the shrimp which makes every bite a delicious event.

It is the last restaurant on the lake side before you reach San Juan.  Place is packed on Sunday afternoons.

I have to agree, La Iguana del Piedra has the best coconut shrimp. The coating has small pieces of coconut and is not too sweet. Also, the mango sauce is delicious. All in all, the best I have had lakeside. Try the shrimp empanadas. They are also the best I have had.
