Oh, come on. At 5:00 PM if I decide to make spaghetti, I'm not going out again to find heirloom tomatoes, roast them & make a big production. Famous chefs use canned tomatoes & in some recipes they're preferred.

Carry, I think some people are less spontaneous than others. They can not imagine suddenly deciding at 5 p.m. to make spaghetti. At least you are reaching for a can of tomatoes. Many people would be reaching for a jar of Ragu.

I laugh as I lay on my bed in the jungle of Xilitla drenched in sweat and where if the humidity index rose just one degree it would actually be RAINING!! This has got to be one of the most beautiful places on earth, and I am one wilted gardenia.

Costco sells a brand of organic canned tomatoes which work really well in making s'getti sauce, and by the time a decent cook gets through spicing up the mix and adding real Italian pasta to the menu, it tastes just fine and yes, you can make up your mind to do it at 5 p.m.
In this weather, you don't want a simmering pot of ANYTHING all day long.

If you're a wilted gardenia you must smell good. BTW, Greta had a play date with Chule the boxer that Orson Perez owns & came home exhausted. You really should look into this for your dog. He'd love it.

Look for the DOP certification.
