Recommended Recipe - Apple Cider Brined Pork Loin Roast w/Potatoes & Onions
For a Thanksgiving change of pace, we decided to try the above mentioned recipe with just one slight modification - substituted hard apple cider for the unfiltered apple cider called for in the recipe. Otherwise, we followed the following recipe exactly:

We purchased our roast at Costco and didn't have to peel the membrane, remove the chine bone or french the roast since those details were taken care of. The roast was moist and tender and while the coriander imparted an interesting flavor twist, it wasn't overpowering. Highly recommend this recipe if one is so inclined to cook a pork loin roast.

As a follow-up, we had warmed up leftovers last night - not nuked but a slow warmup in the oven. The roast was still very tender and moist - very tasty! I will be going to Costco manana and our thinking is that we will cut an eight rib roast in half and freeze it for future use.

Just remember to keep milk jugs filled 3/4 with water and frozen in case Costco doesn't have ice!

I will keep that in mind while making the 10 minute trip to/from Costco. Besides, while it is clear and sunny, it is 32 degrees outside at this point in time.
