How do you make raw unpasteurized vinegar from scratch?

Someone on TOB said they have it at Alchemia in Ajijic. Where is the Alchemia store?

In older, traditional Mexican homes they have been making their own vinegar for generations. The most common id made from pineapple. Peel and core a pineapple. Put the peeling and core in a clear glass container (eat the good part!). Add a cone of "piloncillo" and water, cover and let it ferment for a month or so. Strain it and there you have it. Save the "madre" that forms to make the next batch. People here that make their own just keep the process going by using the madre, more piloncillo and water basically in perpetua.

When my darling wife makes an apple pie I take the peelings and cores and submerge them in water in a jar for a few weeks . The apple ferments and eventually turns to vinegar (apple cider vinegar to be precise).

There a a few other points like I think you add sugar to the initial jar contents to get the fermentation going. You can filter of you don't like a cloudy mixture. Keeps for months in the fridge

Just do a google search. That's how I got the recipe.
