Is there any "official" taxi rate Lakeside or
is it what the traffic will bear?

I think there is a standard rate between lakeside cities and at one time, the fee to the airport was the same, I believe that is still the case.

Chapala used to post a rate sheet in the kiosk on the plaza but it’s been removed. Rates are pretty consistent though.

I assume also make sure of the price before getting in the taxi.

Here’s what’s I’ve got for phone numbers:
Chapala Taxi Kiosk plaza: 376 765-3511
Ajijic Taxi Kiosk plaza: 376 766-0674
I just called both to verify and yes, they say they are the kiosks at the respective plazas.
Rates seem pretty consistent but always ask before getting in. Minimum seems to be 40 pesos from one village to another.

We used taxis a lot in San Miguel and always found that flagging down a taxi was cheaper than phoning for one. And rates were always more expensive after 9 pm. Is that the case here?

I'm going to assume only Spanish spoken.

I have called the Ajijic Kiosk number on two occasions and both times the taxi has been a "no show" (or it showed up long after I found alternative transport). I usually just walk to the plaza to get one now. I was using UBER but they are few and far between around here.
For any of our guests going to or coming from the airport I use a specific driver which I schedule ahead of time.

Taxis are non-existent after 9 pm here, and possibly 8 pm. It’s very much based on demand. For very early or late cabs you must get the card of a driver and contact them directly.
As far as flagging down vs phoning, I’ve not seen much difference. I always always always ask price before getting in, and when doing so the prices are very consistent. If you didn’t do that I suspect prices would vary widely lol.
