Hot Sauce
When living in Guadalajara, I used to walk past the Valentina Hot Sauce Plant every day. Later I moved to Chapala, but never saw the Cholula Plant. What is the location of the plant in Chapala?

I think it is on the west side of the carretera, leaving Chapala, but before reaching the intersection with the libramiento. I know they make salsas there, some with the label, La Viuda,

slainte is correct. It's called "SANE", huge building, can't miss it. They make Salsa Chapala among others.

I think I'll stick with the chile de molcajete that my wife makes,but our son loves the Valentina or the Salsa Huichol brands..

Can someone tell me where to find the taco sauce you find at the taco stands? The medium red one. I'm thinking of just asking them to fill up a Tupperware container for me. It's so good. I've traveled around and noticed all the regions have their own type. Here is by far the best! IMO

Some used to use Valentina,bought in bulk,but would be reluctant to "fess up"!
At one time I think Cholula was owned by a tequila company, I keep wanting to say Jose (rotgut)Cuervo. Watch me get sued for defamation.!
All those little family owned businesses get bought out!

Cholula is one of my favorites, especially the chipotle. Another is Tapatio made in the largest taco eating state, California near LA.

Some guy named Harrison was the founder of Cholula years ago in Puebla, if I remember correctly. The company, brand name, has been sold several times, and even if owned by a tequila distiller, is probably produced by a small company like SANE in a private labeling operation.
They probably wanted to be sure that the "sangrita" was available close to the tequila to help the liquor sales.
What's a caballito without sangrita?

I agree that nothing beats fresh, homemade salsas, but his thread is about a pepper sauce....like Tabasco in the US. Do you make that at home?

I actually do make my own pepper sauce. I have grown Indian Ghost peppers and Trinidad Scorpion peppers. The sauce is extremely hot.

Another great Valentine products is the dried chili flakes like we use to put on Pizza in US. Great flavor with nice heat but not too much. Cholula also has a resturant chain. We ate once at it in Tequilla. Very different menu with some unusual stuff. Near Jose Crow museum.

What about the thick red hot sauce you spoon on your taco. There's like a green one then the levels of red sauce. Maybe there's a recipe. I'm gonna head to the Wednesday market to inquire.

Herdez has a nice sauce called Tacoria (sp??) which is much like Jessica Taco shop red sauce. I know Herdez is as coporate as it gets but I like the sauces especially for a base to add goodies.

I have noticed Mexican women pride themselves as cooks based on how they cook beans and salsas. You may find as many recipes as cooks. Google salsas and hot sauce and discover many recipes.

Yes, just about anything home made is preferable over store bought.

First,
I see no reason to justify my decisions to you or anyone. I would never question yours! It like many other posts was a statement, opinion or information. I'm sure there are many other Co. that pay similar wages. My "Beef" is watching my friends and neighbors struggle to survive (while paying a staggering sum of $800p Mo. rent) with continuous rising prices and stagnant wages. I'm sure my " boycott" won't affect their bottom line! There have been many positive changes here over the years but rising wages is not one. To the best of my knowledge the owner is a person not a corp. Because I' sure you'll ask, A friend claims to be a friend of the owner. I have no reason to doubt him, he's a Dentist. He's the reason my friend got a job there. It seems the "newbies" posts are always questioned. Not all "Newbies" have just arrived!

I know people that work at bars and restaurant's for nothing but tips. Some days they make nada. That sauce company is typical of just about every factory job in Mexico including the auto manufacturers. That is the only thing that keeps Mexico competitive. It certainly isn't the "business or government ethics"......jaja.
