Apparently charcuterie is a big food trend in United States. This is fine quality meat curing. You need a good source of Pork (which Mexico has) and an old fridge for meat curing (which can also be used for dry aging beef). Do a search "homemade charcuterie" and see it's for you. Lot's of new books and blogs.

Thought maybe that Goiti (http://www.goiti.com.mx/) on Ave. Mexico might be a source but we were in there this afternoon and checked with no luck.
