Just wondered why they are called green. They are red when ripe and then they are put out to dry. Are coffee beens that are not roasted yet called green?
I bet the place accross from the Paroquia in Ajijic has them too since they roast their own coffee.

I can understand your confusion. In U.S. English, green has other meanings besides color. Further down the list of meanings are (according to Webster´s Dictionary):
8a : not fully processed or treated: as (1) : not aged <green liquor> (2) : not dressed or tanned <green hides> (3) : freshly sawed (green wood)
b : not in condition for a particular use
9a : deficient in training, knowledge, or experience <green recruits>
b : deficient in sophistication and savoir faire : naive
c : not fully qualified for or experienced in a particular function

Martians represent the color green. Unless those coffee-drinking Martians you reference are young and inexperienced (or lacking in sophistication which seems unlikely).

A question: with all the different varieties of coffees available on today's market - WHY? I consider myself a bit of a coffee snob but I pay absolutely no attention to brand names. For me it is about the "depth and complexity of flavor" that our coffee maker produces with the roasted beans we choose to purchase.

A kilo of roasted coffee is approximately $125 pesos.

Go to el Arbol Café, introduce yourself to Lalo, the owner, and ask questions. He installed a new roaster a short while ago and if he's not too busy he's usually happy to talk about coffee.
