New (to me) Way of Grilling Steaks on the Barbie
Like many amateur BBQ cooks, I am always fiddling around with new recipes and different ways to grill various things on the Barbie. I ran across the following method this week on a BBQ site on the Internet and tried it last night.
I seasoned 2 Prime Boneless Rib Eye Steaks about 6 hours before I planned to start cooking them. While I was able to sear the steaks on our infared searing burner on the gas BBQ, one could do the same on a charcoal grill when the coals are at their very hottest. After applying a thin coating of oil, I seared the steaks about 1.5 minutes per side and then set them off on a plate for 15 to 20 minutes while the main portion of the grill reached full temp. From that point, I grilled them as I normally would. My only mistake was that I didn't account for the steaks partially cooking while resting after the searing. So the steak I wanted rare was medium rare to medium and the other that I wanted to be medium was closer to well done.
As promised by the recipe, these steaks were extremely tender and super juicy!
