Now here is an ingredient that is popular in many food cultures, particularly (Bengal) India and Thailand. There are considerable green mangoes available in Mexico for the next few months, and they are inexpensive and delicious. The flavor may be described as rich and tart - sort of like tamarind. When you fire roast them over charcoal, as they do in India, they take on a whole other dimension. First of all they become soft, and easy to work with, there is a slight smokiness, which you would expect, but also a strong caramel flavor from the charred skin. After grilling you main bout, toss some green mangoes into the remaining coals and let char on all sides. When they are cool, the next day, peel them like a hard boiled egg. Once you have tried this, I believe you will be like me, and can't believe that this ingredient has not found it's way as a staple Mexican cuisine.

Here is a recipe for Caprese salad (tomato and fresh cheese) with a roasted mango dressing. Note that you can roast in many ways, as with peppers, tomatoes, etc., but that fire roasting is usually the best.
