I´ve heard of a place in Ajijic and another in San Luis Soyotlan. Been invited but never gone.

You should do it, Spencer. The alcohol kills any germs and there's literally nothing fresher.

Just another reason to live in San Luis.

Any small dairy and don't forget your chocomil.How long have you lived here that you don't know where to get agua miel or pajaretes?

I usually get them on the south side of the lake, Viajero. I'm looking for more local sources.

In that case just look for the guy on the donkey delivering "leche bronca"and mix your own.

My most memorable pajarete experience was at a ranch in Chavinda,Michoacan with a couple of compadres of mine,some of the boys had a few too many pajaretes and decided to play amateur toreros with the resident bull,now that was fun to watch.

The most fun place is out the main street which runs south of the plaza in San Antonio heading east before Riberas. After the last street to the right keep going past the house on the right which look like concrete bunkers. Ahead on the left hand corner will be a dairy where the guys congregate. There are some small bungalows just past that corner, on the left, and similar bungalows going down the corner street toward the lake. Unfinished house on the right. Wish I had a map because I am sure these streets all have names.

Take your cup, cocoa, tequila and Kahula. About 20 pesos. It is really delicious.

On Monday DH also saw a sign west of Ajijic, mountainside, past Sabinos?

If you are interested in a real pajarete experience, there is a large goat farm off the Libramiento. You drive up from Walmart about 4 kms, - you pass the fire station and about 200 meters after the 'Instituto Tecnológico' you'll see a large construction yard on your right that sells building materials like gravel, sand, rocks, etc. (Owned by Juan Palos) Immediately across from there is a dirt road, there's a cattle grate at the entrance, and you go up this dirt road about two kms until you see the first farm on your left. That is the goat farm and they have over 200 chivas and it is owned by 'Don Chayo'. They sell fresh goat milk (and I mean really fresh) for 10 pesos a litre. And if you bring your own cup or container and some coffee and alcohol you can make your own pajarete.

Even if you aren't into goats milk it's worth going there just for the view, it's got to be one of the best views at Lakeside. And it doesn't take long getting there, maybe a ten minute ride from Walmart. You can also order fresh goat cheese there as well.

Back in the states I owned a small hobby farm with goats and milked every day. Nubians - the sweetest milk! Goat milk is great but I understood that pajarete is usually made with cows. I guess whatever is available.
