There is a misconception about USDA inspected meats. Just because the meat says USDA inspected does not mean it is USA meat. It could come from Mexico, Canada or anywhere. USA cattlemen have lobbied to get meat labeled as to its origin but so far nothing has been done. The inspection could have been done by government inspectors but most meat processors have applied to the government for permission to self inspect and certify. So the meat you buy may not be from the USA and probably wasn't inspected by government inspectors. Costco probably knows where their meat comes from but I'm sure many other suppliers don't. Here in Mexico the Sonora beef is cheaper and probably as good or better than the USDA inspected you buy.
