Cafe Negro
Today we had breakfast at Cafe Negro. The menu was in both English and Spanish. Our waitress did not speak English, but the menu made it easy to order. She was very attentive and polite and we gave her a big tip. My Spanish vocabulary is increasing at a snail's pace but progress is being made.
I had #1 Waffles, bacon, eggs and fruit with coffee. My wife had the #6 Spanish omelet which came with fruit, avocado slices, and potatoes. All was good, hot, and delicious. We shared a chocolate muffin for desert.
Definitely a great breakfast place.

We used to buy half liter containers of egg whites from Cafe Negro. One day I asked Thomas, the manager, why they had such a lot of egg whites to sell.
He explained they would sell 800 eggs benedict a week and used the yolks for Hollandaise.

LOL! They've got to learn how to make Meringue... either individuals or on lemon pie.
And I'm amused because my hubby once decided to make a lemon meringue pie for dessert while I was napping. He said it was REALLY hard work which puzzled me... then I found out that he beat the egg whites WITH A FORK. We still chuckled about it years later.

I used to bake a lot of custards and crème brulees using more yolks than whites. I kept a bowl in my freezer and put the whites in it. Over time, when I had enough whites, I'd thaw and make an angel food cake. Freezing egg whites doesn't affect them at all.
