No, not the abused kind. The topic of Bob's smoked salmon in the "Tuesday Market" got me to thinking I should start another thread.

I recently saw a technique for coating fish for pan-frying, generally whitefish. Instead of cornflake crumbs, breadcrumbs, or even panko (my fave), this uses ground up fried onion bits. They can be bought in little bags in the salad dressing section of WalMart near the croutons. Using the typical flour, egg, dredged coating routine, the onions provide a much bigger surface area to fry and a lotta taste. Just thought I'd pass it along.
