The Hot Dog Shop
Located on Ocampo about 1/2 block west of Colon in Ajijic. They have brats, polish, franks and various others however they are serving them on skinny little Bimbo buns without the proper condiments (no cut jalapenos, no sauerkraut, no fried onions). For $65 you get a polish sausage on a bun, a handful of potato chips and a few lettuce leafs with some shredded carrot. I don't know if I'll go back however I would love to just buy some sausages off the guy so I can prepare them the way I like........

Cocinart often has Polish sausages (big ones) served on a good bun with other stuff in it: side salad and taters included for $65 pesos.
You sit; they cook, and they're good about bringing whatever you want for garnish. Good quality sausages, too.

I don't eat much meat but I wouldn't mind getting a couple of turkey sausages (NOT TURKEY FUD FRANKS) for the freezer for the same reason as you.

They did show a turkey sausage on the menu too. Don't know if it was FUD or not.

Not to hijack the thread, but is there a local source for any of these type of sausages (brats, polish, weisswurst, etc.) even really good breakfast sausage? I've tried Tony's and wasn't impressed and Johnsonville just doesn't cut it for me.

No, and there is a gap in that food product market if you're inclined to start a business. . .

Re: The Hot Dog Shop
Update: I was talking to The Hotdog Shop on Facebook and they said they will soon start making their own buns and get some more condiments like the ones I suggested.
I am not sure where the hotdog shop is getting their product (maybe they make their own?). I will ask next time I am by there. They may not want to post their source on Facebook.

Good, thanks!
If the turkey sausage is Fud, you can save me a trip.

Re: The Hot Dog Shop
I had the chicken sausage and it was really good. It was very large. The bun was adequate for me. I think it was 55 pesos. It had small veggie bits in it, not too salty, cooked just right. Looked homemade to me. Delicious! I was on the run and wanted it para llevar, so I nixed any sides and just put a little mustard on it. I told him I'll be back.
