Bacon is completely unwholesome in every aspect.  Dawg prefers  pulled pork sammiches and tequila accompanied by fresh habanero chiles.  The place in Dawg´s neighborhood adjacent to the Casa del Waffle calling itself City Sándwiches went broke  within days of opening.  They made a good pulled pork sammih but are now history.  The chef was from Mississippi and  understood good southern BBQ.  He is probably back in Hattiesburg by now. Anybody know of a good alternative BBQ joint hereabouts serving up authentic BBQ pulled pork sammcihes?

Heading out for some of that bacon.

We do smoked Lox and also do smoked salmon. Last year it sold well but during low season not so much. If we see an interest we can make it and keep it frozen for over the counter sales. (unless pre ordered, then it can be fresh)
To keep the smoked salmon more fresh we will take orders and make it for you.
Lox takes 7 days to make regular salmon take 4 days to make.

P.S. we also smoke fish for CBob after his trips!

These are smoked Prosciutto & smoked Kentucky salt cured hams (In the curing chamber).
They will be done next December!

Whilst I never got to City Sandwich in the few hours they were open I can say that La media Luna has the best pulled pork sandwich I have ever had south of the Misssissippi. Give it a try.

Yes they are! :-) Some will age Prosciutto for only 6 months (like what they sell at Super Lake) But other go as long as two years.
Kentucky hams should go no less that one year so we're shooting for one year for both.
February, I'll be getting another hog and starting four more in hopes of keeping stocked up in the future.

I had a great pulled pork sandwich at Cocinart last week that was really good, had little red potatoes and salad with it.
