Check with Rick who makes the corned beef at the plaza. He knows where to get the good stuff.

I get it cut to order at the butcher shop on the carratera in Ajijic that is on the lake side pretty much at the top of the hill heading west past the last traffic light. They are next to a place that sells tortillas and there is always a big metal tub in front where they are cooking pig skins. The place that sells fountains was next store untill it recently moved.
The ladies(butchers) will cut and trim the brisket any way you want it. I get a flat cut and well trimmed.

He and his wife Heidi have a little shop right across from the school at the Ajijic plaza. They sell t-shirts and corned beef.

Rick used to own 60's in Paradise and The Early Bird restaurant's. They seem to be open every day during the week.

Brisket Empty Corned Beef for St. Patrick's Day

This is Rick, former owner of 60's in Paradise and The Early Bird Cafe. We are selling the same Corned Beef we sold at our restaurant. It is un-cooked! Believe me, if I can cook it, anyone can. Our shop is located 1/2 block west of San Andreas Church on Parroquia which is the street that runs along the south side of the Plaza in Ajijic. I'm afraid we will run out of product probably within the next two weeks as we did not anticipate the increase of our day to day sales in our new location. If you're interested in Corned Beef, I would say come in soon. Our hours are Tuesday-Saturday from 9:00 to 2:00.
