at the chapala mercado. the leg is gone because i bought it but not for birria-bbq with woodys cookin' sauce.

I like it barbecued or estilo tatemado,better than birria style too.
When we go to my in-laws rancho,they do it estilo Nuevo Leon,like the place you mentioned in Jocotepec.

trouble is that only old goats are sold around here so birria is the best bet. never found REAL lamb here either except some frozen shoulder steaks at soriana not very tasty. well in addition, i did get tender lamb a coupla times, the front legs only for bbq.

Two vendors at the Tuesday Farmer's Market sell lamb. I know the woman in the left hand corner (as you enter from the parking lot) will take special orders if you want a specific cut.

been there done that no thanks if they also raise beef and were at the old monday market. the lamb was tough so bordering on being sheep
