side trip possibilities returning from Texas Eagles Pass entry
We would like to make a side trip while returning to Mexico. The time frame is early next week.
There seems to be something going on in Guanajuato as hotels are booked but if you know of a place there let me know.
Maybe north of Guadalajara would be good, Jalostotitlan, where the inlay woodworkers are but how do you find them there?
Or still over in southeast in Mich for Delores Hidalgo?
Is there anything in Saltillo to see?
Any suggestions we will take...we have two or three days to be road warriors.
Thanks.

For Guanajuato, you might check out this highly rated B&B:

Since you didn't provide your exact dates, I put in Monday - Saturday and it appears they have availability every night.
For those same nights, Booking.com is showing:

Dolores Hidalgo is in the State of Guanajuato and from our limited experience, we cannot recommend staying there because of marginal hotels and very limited dining options. We go there fairly frequently on business and generally stay in San Miguel de Allende because of the choices offered.
If you have any interest in leather products, you might consider Leon. There is a Holiday Inn directly across the street from the Zona Piel: http://www.ihg.com/holidayinn/hotels/us/en/leon/bjxex/hoteldetail

Re: side trip possibilities returning from Texas Eagles Pass entry
I'd go to Zacatecas (since I've never been, somehow). Otherwise, if you want something different and easy and great, Queretaro for a few nights in el centro.
Dolores Hidalgo is a snore. I spent three nights there happily, but that was years ago when I was much easier to satisfy. If you want a city fix, do Queretaro if you've never been. Or, nearby Tequisquiapan is pleasant in a touristy, sorta-like Tlaquepaque kind way.
