Check with the consulate or major hospitals in Guad, they may have a Mandarin translator listed.

Some time back, I was reading an article about companies that perform such a service with a combination of telephone and online hookup through your computer. Don't remember any specific company names but maybe Google can be your friend?

Try the people at Min Wah, maybe they're Mandarin.

You might try these folks ( Abacus Chinese Translation Services ) in Mexico City. They say they can do a 3 way conference call and can work with the Mandarin and Cantonese languages.

They speak Cantonese and Shanghainese, I believe. Try U de G, probably won't cost you anything

You really tossed me a curveball with "Shanghainese". I was born in Shanghai and have been told that I spoke some form of Chinese (as spoken by our servants) before English. We were chased out of China by Chairman Mao when I was two and a half and I don't remember actually speaking the language. Thank you for using the term "Shanghainese" as it forced me to do some research and learn something new!

I too worked in China, before working in MX. I had spoken Spanish since young, but learning " Chinese" is very hard, at least for me.

Wow, Chairman Mao Days, that IS interesting. My 1st time there most people had bikes, now, it is zillions of cars, this was well after Mao was off the scene, like 2 decades.

There must be at least 0 dialects in China?

My brother in laws family was thrown out of China at the same time and they
speak a local only version of Chinese. Probably the only people speaking it
in the US. Grandma is dead and slowely but surely my family speaks much
more english than chinese these days and there are far fewer playing chinese
dominoes in the living room. The conversion to PNW is almost complete. I
miss Grandma as she pretended not to know any english but my Mom and I
figured out that she understood everything LOL. She fooled her children and
Grandchildren since 1950 or so. A very classy woman in my opinion.

There are 56 "Officially recognised" ethnic groups in China and between 10 and 15 (depending on the source) official dialects. Mandarin is "Official" language for all of the PRC.

Well there is a defacto "official language." However since the USA has such a short history there are no "officially recognised" dialects. Never the less there are several distinct dialects across the USA.
