Yeah, well, I'm assuming those chickens haven't reached menopause and didn't need any.
However........her food is delicious and nice to have in the freezer when times get hurried.

It was already shown at a link on another thread that chickens are not fed hormones but that some producers label their chicken hormone free as a marketing ploy regardless. The truth is, all chickens contain hormones. They produce them naturally as do the rest of living things on this earth.

Re: Farmers Market menu May 1 - Barbaras Milagros
Sorry Solovino, we just had some turkey and chicken killed that morning at the home of an indigenous friend. They were "free range chicken and turkey" without hormone and corn fed, we could barely eat them they were some darn tough that we almost lost our teeth on them. The real healthy stuff is not what it is craked out to be, give chicken with hormones raised to have big breast any day!

Sorry brigitte, you completely misunderstand. All living things produce hormones therefore labeling chicken "hormone free" is misleading. They contain the hormones produced naturally by their own bodies. What the marketing people want consumers to believe is that the birds have not been fed hormone supplements, which they haven't. It is prohibited and doesn't do any good anyway.
My late father in law would eat nothing but pollo de corral or if you please, free range chicken. He refuse to eat pollo de granja o pollo de engorda which are commercially raised birds such as Tyson or Pilgrim's Pride.

Re: Farmers Market menu May 1 - Barbaras Milagros
Thank you for the clarification,
In France hormones addition are forbidden as well and there was a big stink about chicken coming from the US having been fed hormones.. since it was a trade war , I do not know if that was correct or not and frankly I do not care too much if the chicken is good.
I have notice that in Chiapas and in Oaxaca every time my friends kill a chicken it is tough as nail. My cousins tell me it is the same in Africa. My grandfather had chicken also running around that were delicious so what is the difference?
Does it come from the fact that they are killed older here? My grandfather was feeding them corn veggie peels and they ate whatever in the garden, here I have noticed they are fed masa and whatever is around, why are they so tough?
The people here are very proud of their pollo de corral but I am about to lose a tooth every time I eat one. Why?

A little sacrafice in the name of healthy eating....
No Problemo...
You just take a Hatchet, a Mallet, and a Pair O Pliers and go to work tenderizing yer healthy bird, till the meat falls off the bone....

Re: Farmers Market menu May 1 - Barbaras Milagros
Back in the late 40's in Shanghai, China (as related to me by my parents), our Chinese cook would always purchase chickens, ducks or geese live at the market. He would prepare some secret concoction that included beer, wine or booze, depending on his future recipe plans, and feed to the fowl in fairly heavy doses. At a certain point in time, he would hang the fowl upside down by their feet. By his own scientific formula for the length of time necessary, he would then terminate their lives with extreme prejudice. Again, as related by my parents, their cook was well known for his tasty and tender preparations of various birds.

The cook would not do anything special , she twisted the chicken´s neck and then bled it or cut the thoat of the duck or geese first thing in the morning and the birds were tender and juicy once cooked so I am not sure what the birds down here are so tough.
