Where, besides the Wednesday market or the shop on 16 de Septiembre (which is most often closed) can I get a watch battery for a nice watch?

If you just want a battery they sell many types at the dollar store in Ajijic plaza.

Because special tools are needed, it needs to be "installed" where the battery is sold. It's a Seiko.

Gringal, the same guy (Don) who does the knife sharpening at Kinda Bazaar also replaces watch batteries.  

I have not used his services but he gets good review on FB.

I don't know his hours, but you can call the store,

You can also go with an Citizen Men's Eco-Drive, and never change the battery.
