El Torito meat counter...they grind it while you watch. I have bought it there for 5 years, always great!

Great. Do you know where the part of the pig it comes from? Loin. Shoulder. Ham. Or someplace else? What part of the pork do you request to be ground?

It looks like a shoulder to me. I just ask for un kilo puerco molido. They always grab the big piece which again, looks like a shoulder.
Years ago I used to buy that cut in US to put in our smoker.
They have chops if you want something lean; they will grind any meat for you.

I think the should would be the best. Can you ask for a certain weight of meat like 1 kilo or less?

Of course, ask in gramas or kilos...I often get medio kilo (1/2).

They also have ground pork at the butcher in the Ajijic Plaza. Their ground beef is the best so I assume the ground pork would be good too.

Yes, that's the one. The dogs are smart enough to know that they are closed on Sundays and never go there that day.

It is doubtful you will find pure wagyu in Mexico. There is no real truth in meat labeling. If you are lucky a wagyu bull was used on black angus cows and the meat is wagyu. If it has a trace of wagyu from bull or cow it can be called wagyu.
In my opinion, good black or red angus beef is hard to beat. I have not been impressed with the wagyu bulls I have seen. In Texas many cattlemen are using the wagyu bulls so they can call their meat wagyu.
