Storing fresh tortillas Empty Storing fresh tortillas

Post by cerebrozo Mon Apr 27, 2020 10:18 am

I've always bought fresh tortillas, I've never had to keep them before. But thanks to the coronavirus . . . can anyone tell me how best to store them? In the freezer, in the refrigerator? How long do they keep? What's the best way to reconstitute them? Thanks.

I usually keep them in a sealed (ziploc) bag in the fridge; when I want to use them I do a quick heat on the griddle or you may be able to microwave them in a damp towel (haven't tried that); I use tortillas for quesadillas so I'm grilling anyway. You can put them in the freezer but I've had to use wax paper or something to separate them or they stick to each other when thawed.

The crucial step in storing tortillas is to take each tortilla from the stack and lay them out on a clean cool surface until they are cool and dry. Then flip them over and do the same on that side. Store in plastic bag in fridge. Reheat in pan or comal in oil or not, depending, and enjoy. Provecho!

Thanks very much for your response.  The answers from google didn't say to let them cool first (both sides!).  That's why I find advice from real people with actual experience to be the most helpful.  Take care.

Gotta love that second link that says to put wax paper between tortillas before freezing. That effectively doubles the price. Might as well just buy more fresh. They ain't no good after frizzen anyways.

LOL. Ain't that the truth. Anyway, it's kind of an oxymoron "storing fresh tortillas" but I understand the request under the current circumstances.
