Totally agree about the carnes, much like the place on highway 15, south and west of Jocotepec, as you are leaving town towards Guadalajara, and I think they are there on Saturdays, as well.

Slainte,you don't have to go that far,in the Centro Historico on the Calzada Independencia there is a restaurant called Nuevo Leon,it's been there for 60 years,best cabrito I ever had.

The restaurant takes its name from the top state for cabrito over mesquite wood fire  the epicenter being the town of Monterrey.

One time I was at a cabrito restaurant where the cooking kids looked like big chickens on the sticks. I ordered asking for the part offering ribs. I ate what I could and took the rest home.

The next afternoon I remembered the cabrito and popped it into the microwave and went into another room. When I returned I thought of the song, "Who let the dogs out?", the stench reminiscent of a wet hunting dog after a quail shoot. I didn't smell it in the restaurant at all and while I love cabrito, I will take mine home in a true doggy bag.
