Agave Nectar

I have to admit my ignorance. I had never heard of Agave Nectar or Agave Syrup until I saw a bottle of it in the health food section of my local supermarket. WTF? A sweetner made from 100% blue agave Weber? The idea of wasting perfectly good agave on anything other than God's intended purpose was a concept totally inconprehensable to me. I had to buy it.

Well, the short and sweet (yes, pun intended) of it is that I put it to use today. Yesterday I bought a carload of strawberries and this morning I cleaned and chopped up about 2 liters and used about a cup and a half of the syrup instead of cane sugar to make some preserves. Great stuff!

I would imagine it will go great with mangos or in a mango chutney also.

Plus......no waste of the precious here: My friend makes a margarita that would floor an Aztec warrior. Scratch, from squeezed limes and sweetened with Agave Sweetener.
