I prefer to find one pre-made, but if not, I can have one welded custom for the BBQ I want to build.

Might try Strom Movers top of hill lake side going west out of Ajijic. He has a Bar B-Q store and may have a grill you can use.

There is good place in Guadalajara that does custom stainless work for concinas - can't remember the name but it is on 8 de Julio just above Washington on the west side.  They manufacture a lot of the stainless BBQ's you see around here.

There is also a stainless steel shop on the west side of the highway between Chapala and the airport (closer to the airport).
