Try something radical: fry up some real onions and toss 'em in. You don't want to know what's in those little packages. Sure, go for the Wooster sauce, especially good on burgers, too.

I have a special recipe that everyone seems to love. To get that extra "tang" I put a mixture of ketchup and brown sugar on top for 10-15 minutes before removing from the oven. Yum!

Dawg, meatloaf is comfort food, along with mac and cheese, for which I have a fab. recipe. Let's not look down our noses at what most of us consider to be good eating no matter where they come from.

It may not be known to you that Dennis Hopper, upon completing the script for Head, and having partaken in some relaxation therapy that wasn't alcoholic, conctocted the first "Hollywood Hopper Mac 'n Meatloaf" ever, and if that 60's icon was up for that, then the rest of us should be bowing before the same mixing bowl and taking the meal as our daily bread.

FRANCINE´S IRAQI LAYERED MEATLOAF
Ground Lamb
Copious Amounts of Mashed or Finely Chopped Garlic
Generous Amounts of Ground Allspice (known at Lakeside grocers as pimienta gorda)
Lots of Lemon Juice (and by that I mean limones agrias, limones amarillos or U.S. style yellow lemons) I usually use about ten lemons.
Pinenuts
Sliced Eggplant
Sliced Tomatoes
Extra Virgin Olive Oil
Salt to Taste

Brown the ground lamb meat in olive oil with the pine nuts, garlic and lots of allspice and salt to taste. Saute the sliced eggplant in some olive oil. In a baking dish, layer the eggplant slices and tomato slices alternating with a layer of the lamb/pine nut/garlic mixture and then another layer of eggplant and tomato slices and ground lamb mixture topped off finally with a layer of tomatoes over which you pour the large amount of lemon juice to mix with the whole shebang. Sprinkle sugar over the top layer of tomatoes after having added the lemon juice. Bake this layered Iraqi layered meatloaf concoction in a hot oven for a while until the tomatoes on top have caramalized. Serve with rice cooked in the style popular in Iraq or perhaps Iranian-style "Chelo".

One of my great heroes. I had to think back but have decided his best movie was Red Rock West with Nicholas Cage. 1993. I can´t find a print of that film.

For the folks who don't know the Monkeys Band was trying to break away from the how cute are we NBC so they wanted to make this movie called Head. Also
it was my understanding that Jack Nicolson was also involved in the movie. It did not give the monkeys the new personality they wanted but was thought of
as a bomb and it was the end of the monkeys. Anybody seen the movie????? I have always wanted to see it.

Saw it at the show when it came out. Weird and druggy and totally not Monkee Fun. Very much the movie one would expect Nicholson and Hopper to make.

Here's a DIY if you don't want to use Liptons:

Copy Cat Recipe – Lipton’s Onion Soup Mix

Ingredients
1/4 cup minced onion
1/6 cup beef bouillon granules
1/8 teaspoons onion powder
1/8 teaspoon celery seed
1/8 teaspoon sugar
Instructions
Combine all ingredients together.
About 5 Tablespoons = 1 package
Onion Dip = One pint of sour cream + 5 Tablespoons of Mix

Well all this talk about meat loaf.... Guess I am commandeering the kitchen.

Lean ground beef, chopped onion and bell pepper. Add an egg, salt and pepper. Throw in some left over garlic bread, then add come tomato sauce and top with tomato paste. Oh yea and some chopped celery I need to get rid of.

Espíritu del Lago's recipe is similar to mine, which always gets rave reviews. I toss onions, a little garlic and bell peppers into a blender, then add to meat, eggs, bread crumbs, salt, black pepper, etc. I also add a little ketchup to the mix. Have always felt that the bell peppers were what added that extra needed flavor. Of course, I have to make a BIG meatloaf to feed our gang.
